If you have only tried the boat-shaped Adjaruli khachapuri with an egg on top, Imeruli style is the other essential version — flatter, round, and all about the cheese. The dough should be thin enough to crisp at the edges but still tender in the middle, and the filling should taste clean and milky, not overly salty.

This recipe uses a simple yeast dough with yogurt for tenderness, and a filling of farmer cheese or dry curd cheese mixed with mozzarella for melt. After baking, brush the top with butter and cover loosely with a towel for a minute — it keeps the crust supple.

Serve warm in wedges as a meal with a tomato–cucumber salad, or cut smaller as a stunning appetizer.

    Mix dough: Combine flour and salt in a bowl. Add yogurt, oil, and yeast mixture. Knead 8-10 minutes until smooth. Rest covered 60-90 minutes until nearly doubled.

    Note:Press cottage cheese in a towel if wet.

    Divide dough in half. Roll each into a 12-inch round on a floured surface. Mound half the filling in the center, pleat edges toward the middle, pinch tightly to seal, then flip seam-side down and gently roll to an even round.

    Preheat oven to 475°F with a baking steel or stone on the middle rack. Transfer rounds to parchment on a peel or inverted sheet pan. Bake one at a time until deeply golden, 14-18 minutes.
